Home-made Hash Browns.


Next time you’re forcing a metal buggy with a busted wheel down the freezer aisle of your local grocery store, stop by the iced-over glass door that hides the hash browns. If you look closely enough you’ll notice a few things: one, that the price isn’t really all that great for what is essentially a pound of potatoes and, two, there is somehow a lot of salt per serving.

Unfortunately, hash browns also taste absolutely awesome. 

Fortunately, they’re really really easy to make.

Cooking Time: About 20-30 minutes, depending on how you like your hash browns.

Feeds: 4 people. Or 1-2 hash brown fiends.

Ingredients:
2 large potatoes (choose your favourite kind), cubed
1/6 of a cup of cilantro, minced
4 green onions, chopped
2-3 garlic cloves, chopped (powdered garlic works too)
2 tbsp of extra virgin olive oil
1 tsp of pepper

Directions:
  1. Chop up potatoes into hash brown sized cubes. Microwave for about 5 minutes.
  2. Pour olive oil into a large frying pan. Heat up over medium heat. Chop everything else up.
  3. Dump in chopped potatoes. Cover and fry, stirring occasionally, for 15-20 minutes.
  4. Add spices and the green stuff. Keep stirring occasionally for another 5 minutes, or until everything is cooked properly.

Hint:
This is a great way to use up some of the spare cilantro that you may have used in a certain chili recipe.
